Our Story

Pizzaiolo History

Pizzaiolo was born from a passion for authentic Italian pizza and a desire to bring the true flavors of Naples to Canada. Our founder, Marco Rossi, trained in Naples with master pizzaiolos before bringing his expertise to Canada in 2005.

What started as a small pizzeria in Toronto has grown into multiple locations across Canada, but our commitment to authenticity has never wavered. We still use the same traditional techniques, imported ingredients, and wood-fired ovens that have defined Neapolitan pizza for generations.

At Pizzaiolo, we believe that great pizza is both an art and a science. Our dough is fermented for 48 hours to develop complex flavors, our tomatoes are imported from the San Marzano region of Italy, and our mozzarella is made fresh daily.

While we honor Italian tradition, we also embrace Canadian ingredients and flavors, creating a unique fusion that respects the past while looking to the future.

Our Pizza Making Process

Dough Preparation

Our dough is made with "00" flour, water, salt, and a small amount of yeast, then fermented for 48 hours to develop flavor and improve digestibility.

Hand Stretching

Each dough ball is hand-stretched (never rolled) to preserve the air bubbles that create the perfect light and airy crust.

Topping Selection

We carefully apply toppings, balancing flavors and textures according to traditional Italian principles—less is more!

Wood-Fired Cooking

Our pizzas cook for just 90 seconds in our 850°F wood-fired ovens, creating the characteristic leopard-spotted crust and perfectly melted toppings.
